Ingredients:
- 1.00 Tablespoon olive oil
- 3.00 Clove garlic
- 1.25 Teaspoon kosher salt
- 1.00 Piece yellow onion
- 0.50 Cup chicken broth
- 2.00 Tablespoon lime juice
- 3.00 Cup cooked rice
- 1.00 Tablespoon ginger
- 1.50 Tablespoon curry powder
- 1.00 Can coconut milk
- 0.25 Cup cilantro
- 1.00 Teaspoon dried thyme
- 1.00 Piece red bell pepper
- 1.50 Pound white fish fillets
Instructions:
- Season fish with 1/2 teaspoon salt and set aside while starting the sauce.
- Heat olive oil in a wide skillet over medium heat. Cook onion and bell pepper until softened, about 6 minutes.
- Add garlic, ginger, curry powder, thyme, and remaining salt and cook for 1 minute.
- Pour in coconut milk and broth and simmer for 8 minutes.
- Nestle fish into the sauce, cover, and simmer gently for 6 to 8 minutes, until the fish flakes easily.
- Finish with lime juice and cilantro.
- Serve over rice with extra lime.
Notes:
- Cod, snapper, halibut, or haddock all work.
- Keep the simmer gentle so the fish does not break apart.
- Add sliced chile if you want a hotter curry.
