Description:
Garlic-herb chicken meatballs borrow the buttery flavor of chicken Kyiv and turn it into a practical rice bowl with peas and cucumber.
Ingredients:
- 1.25 Pound ground chicken
- 0.50 Cup breadcrumbs
- 1.00 Piece egg
- 0.25 Cup yellow onion
- 3.00 Clove garlic
- 4.00 Tablespoon unsalted butter
- 0.33 Cup parsley
- 4.00 Cup cooked rice
- 1.00 Cup peas
- 1.00 Piece cucumber
- 1.00 Tablespoon lemon juice
Instructions:
- Heat the oven to 425 F and line a sheet pan with parchment.
- Mix chicken, breadcrumbs, egg, onion, half the garlic, 1 teaspoon salt, and black pepper until just combined.
- Form into 16 meatballs and bake for 14 to 16 minutes, until cooked through.
- Stir softened butter with parsley, remaining garlic, lemon juice, and a pinch of salt.
- Toss hot meatballs with the garlic herb butter until glossy.
- Divide rice among bowls and top with peas, cucumber, meatballs, and any extra butter from the bowl.
Notes:
- Wet your hands before shaping the meatballs to prevent sticking.
- Use ground turkey if ground chicken is not available.
- Add a spoonful of yogurt if you want a cooler sauce.
