Ingredients:
- 1.25 Pound ground turkey
- 0.50 Cup yellow onion
- 1.00 Cup cheddar cheese
- 0.50 Cup Greek yogurt
- 1.00 Tablespoon Dijon mustard
- 2.00 Cup romaine lettuce
- 8.00 Piece flour tortillas
- 0.75 Cup pickles
- 2.00 Tablespoon ketchup
- 1.00 Teaspoon garlic powder
Instructions:
- Mix turkey with garlic powder, 1 teaspoon salt, and 1 tablespoon Dijon mustard.
- Divide turkey into 8 loose balls.
- Stir Greek yogurt, ketchup, remaining Dijon, and 1 tablespoon pickle brine for the sauce.
- Heat a lightly oiled skillet over medium-high heat.
- Place two turkey balls in the skillet, top each with a tortilla, and smash thin with a spatula.
- Cook for 3 to 4 minutes, flip, add cheddar, and cook until the tortilla is toasted and turkey reaches 165 F.
- Top with lettuce, pickles, onion, and sauce.
Notes:
- A firm metal spatula makes smashing easier.
- Cook in batches so the skillet stays hot.
- Use 93 percent lean turkey; extra-lean turkey dries out faster.
