Ingredients:
- 2.00 Tablespoon olive oil
- 3.00 Tablespoon lemon juice
- 2.00 Clove garlic
- 1.50 Teaspoon dried oregano
- 1.25 Teaspoon kosher salt
- 0.50 Teaspoon black pepper
- 4.00 Cup cooked rice
- 1.00 Piece cucumber
- 1.50 Cup cherry tomatoes
- 0.25 Cup red onion
- 1.00 Cup cottage cheese
- 0.50 Cup feta cheese
- 0.25 Cup dill
- 0.33 Cup Kalamata olives
- 1.25 Pound chicken breast
Instructions:
- Toss chicken with 1 tablespoon olive oil, 1 tablespoon lemon juice, oregano, garlic, 3/4 teaspoon salt, and black pepper.
- Heat a large skillet over medium-high heat. Cook the chicken for 6 to 8 minutes, turning occasionally, until browned and cooked through.
- Blend cottage cheese with 1 tablespoon lemon juice and 1/4 teaspoon salt until smooth.
- Squeeze excess water from the grated cucumber, then stir it into the blended cottage cheese with dill.
- Toss diced cucumber, tomatoes, red onion, remaining olive oil, remaining lemon juice, and remaining salt.
- Divide rice among bowls. Add chicken, cucumber tomato salad, cottage cheese tzatziki, feta, and olives.
Notes:
- Blending the cottage cheese before adding cucumber keeps the sauce smooth.
- Pack the sauce separately if making the bowls ahead.
- Chicken thighs work too; cook them a few minutes longer if needed.
