Description:
Tender chicken meatballs get glazed with harissa, honey, and lemon for a spicy-sweet dinner that works with rice, couscous, or flatbread.
Ingredients:
- 1.25 Pound ground chicken
- 0.50 Cup breadcrumbs
- 1.00 Piece egg
- 0.25 Cup yellow onion
- 2.00 Clove garlic
- 1.00 Teaspoon kosher salt
- 3.00 Tablespoon harissa paste
- 2.00 Tablespoon honey
- 1.00 Tablespoon lemon juice
- 0.50 Cup Greek yogurt
Instructions:
- Heat the oven to 425 F and line a sheet pan with parchment.
- Mix the ground chicken, breadcrumbs, egg, onion, garlic, and salt until just combined.
- Form into 16 meatballs and place on the sheet pan. Bake for 14 to 16 minutes, until cooked through.
- Stir the harissa, honey, lemon juice, and 1 tablespoon water in a skillet over medium heat.
- Add the cooked meatballs and toss for 2 minutes, until the glaze coats them and looks shiny.
- Serve with yogurt, herbs, and rice, couscous, or flatbread.
Notes:
- Different harissa brands vary in heat; start with less if yours is very spicy.
- Wet your hands lightly before rolling the meatballs.
- The meatballs can be baked a day ahead and glazed before serving.
