Ingredients:
- 3.00 Tablespoon olive oil
- 0.50 Cup parsley
- 1.00 Teaspoon honey
- 1.00 Piece cucumber
- 2.00 Teaspoon Dijon mustard
- 5.00 Cup green cabbage
- 3.00 Cup cooked chicken
- 0.50 Cup walnuts
- 2.00 Piece pear
- 3.00 Tablespoon pear vinegar
Instructions:
- Whisk pear vinegar, olive oil, Dijon, honey, 1/2 teaspoon salt, and black pepper.
- Place cabbage in a large bowl and toss with half the dressing. Let stand for 5 minutes.
- Add chicken, pears, cucumber, walnuts, and parsley.
- Toss with remaining dressing until evenly coated.
- Taste and add more vinegar or salt if needed.
- Serve immediately or pack for lunch within 1 day.
Notes:
- Apple cider vinegar works if pear vinegar is unavailable.
- Use crisp pears so the slices hold up in the salad.
