- Squeeze excess water from the grated cucumber, then stir it into the blended cottage cheese with dill.
- Toss diced cucumber, tomatoes, red onion, remaining olive oil, remaining lemon juice, and remaining salt.
- Divide rice among bowls. Add chicken, cucumber tomato salad, cottage cheese tzatziki, feta, and olives.
